Last night, I had the pleasure of dining at Sixty Vines in Boca Raton, where I experienced an unforgettable evening of perfectly paired food, wine, and music. Sixty Vines teamed up with The Symphonia, South Florida’s Premier Chamber Orchestra, to deliver a command performance that delighted all the senses.

An Evening of Harmony

The event, aptly named “Harmony & Vines: A Symphony of Flavor,” featured a meticulously curated four-course menu, with each dish paired with a carefully selected wine and live music from The Symphonia. This collaboration resulted in an extraordinary fusion of culinary art and orchestral music, creating a unique and immersive dining experience.

First Course: Fried Chicken & Caviar

• Paired with Sesenta Cava from Spain

• Accompanied by music from Spain

The evening began with a surprising yet delightful combination of fried chicken and caviar. The effervescence and acidity of the Sesenta Cava cut through the richness of the fried chicken, while the music from Spain set an elegant and festive tone for the night.

Second Course: Shrimp Campanelle

• Paired with Stemmari Pinot Grigio from Sicily

• Accompanied by music from Italy

Next up was the Shrimp Campanelle, a vibrant dish that was perfectly complemented by the delicate flavors and citrus notes of the Stemmari Pinot Grigio. The accompanying Italian music added an extra layer of authenticity and romance to the course.

Third Course: Pork Tenderloin

• Paired with Lange Pinot Noir from Oregon

• Folk Music accompanies this course

The third course featured a succulent pork tenderloin served family style along with glazed carrots and crispy smashed potatoes (some of the best I’ve ever had) paired with Lange Pinot Noir. This light to medium-bodied red wine, known for its fruity and spicy flavors, beautifully balanced the pork’s richness. The folk music provided a warm and rustic ambiance, enhancing the overall experience.

Fourth Course: Deviled Affogato

• Paired with Saint Andre from France

• As does the music from France that will accompany this course

For dessert, we indulged in a Deviled Affogato paired with Saint Andre. The combination of chocolate, coffee, and French wine was simply divine,(and if I’m being completely honest, I’m still thinking about it as I write this) and the French music added a touch of sophistication to the final course.

Sixty Vines: The Winemaker’s Restaurant

Sixty Vines is a place where great food, wine, and company come together to create unforgettable moments. Known as “the winemaker’s restaurant,” they deliver wine country-inspired cuisine paired perfectly with 60 wines on their sustainable tap system. They referred to the berry as “star berries” due to the five-pointed star shape formed at the blossom end of the fruit.

The cultivation of blueberries began in the early 20th century, thanks to the efforts of Elizabeth Coleman White and Dr. Frederick V. Coville. White, a New Jersey farmer, and Coville, a USDA botanist, worked together to domesticate wild blueberries. Their pioneering work led to the development of the cultivated highbush blueberry varieties that we enjoy today.

Blueberries are often referred to as a superfood, and for good reason. These small berries are packed with essential nutrients and antioxidants that offer numerous health benefits.

We met store Manager Sean who graciously welcomed us into the tiny but efficient store on Atlantic Ave. He ran through the options that were displayed on the board behind him. We decided to create a pesto fusilli with chicken, sundried tomatoes and pine nuts; fettuccini cacio e pepe (Pecorino cheese, black pepper, cream sauce) with bacon and mushrooms; Bigoli with their Napoletana sauce (fresh tomato sauce, fresh basil, garlic and oregano); rigatoni Mama Rosa (fresh tomato sauce, fresh basil, cream sauce, Parmesan cheese). We also had their bread sticks and meatballs.

  • 4 cups mixed salad greens (such as iceberg lettuce, romaine lettuce, and spinach), washed and torn into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 medium carrot, grated
  • 1/2 red onion, thinly sliced
  • Optional additions: sliced bell peppers, radishes, olives, or any other favorite salad vegetables
  • Optional toppings: croutons, sunflower seeds, or sliced almonds

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard

Caesar Salad

Ingredients:

For the salad:

  • 1 head of romaine lettuce, washed and dried
  • 1/2 cup croutons (store-bought or homemade)

  • 2 tablespoons freshly squeezed lemon juice

Instructions:

  1. Start by preparing the romaine lettuce. Cut off and discard the tough bottom of the lettuce head. Then, tear the leaves into bite-sized pieces and place them in a large salad bowl.
  2. If you’re adding grilled chicken, bacon bits, or anchovies to your salad, prepare them now according to your preferred method. Cook the chicken until it’s no longer pink in the center, crisp up the bacon until it’s golden and crispy, or drain the anchovy fillets from the oil.
  3. To make the dressing, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, olive oil, salt, and pepper in a small bowl until smooth and well combined. Taste and adjust the seasoning if needed.
  4. Pour the dressing over the romaine lettuce in the salad bowl, tossing gently to coat the leaves evenly with the dressing.
  5. Add the croutons and shaved or grated Parmesan cheese to the salad bowl, tossing again to distribute them evenly throughout the salad.
  6. If you’re adding any optional ingredients such as grilled chicken, bacon bits, anchovies, hard-boiled eggs, or cherry tomatoes, arrange them on top of the salad.
  7. Serve the Caesar Salad immediately, garnished with an extra sprinkle of Parmesan cheese and freshly ground black pepper if desired.

Greek Salad (Horiatiki)

Ingredients:

  • 1/4 cup extra-virgin olive oil

  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced

  • Salt and black pepper to taste

  1. Start by arranging the sliced tomatoes and fresh mozzarella cheese alternately on a large serving platter or individual plates, overlapping them slightly.
