Try this delightful main dish that captures the essence of December's holidays: Honey Glazed Rosemary Roast Chicken. 

Ingredients:


- 1 whole chicken (about 4-5 lbs)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh rosemary, chopped
- 4 cloves garlic, minced
- 1 lemon, sliced

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Rinse the chicken and pat it dry with paper towels. Season the chicken inside and out with salt and black pepper.
3. In a small bowl, whisk together the olive oil, honey, Dijon mustard, chopped rosemary, and minced garlic to create the glaze.

8. Once cooked, let the chicken rest for a few minutes before carving.
