CHICKEN CUTLETS WITH SUN-DRIED TOMATO CREAM SAUCE |
While a chicken cutlet typically involves halving a chicken breast, this recipe demonstrates how to create chicken cutlets with an extra layer of deliciousness. In this wholesome dinner recipe, a jar of sun-dried tomatoes serves a dual purpose. The flavorful oil in which they are packed is utilized to sauté the chicken, while the tomatoes themselves become key ingredients in the creamy sauce, adding a burst of rich flavor to the dish. |
Ingredients
1 pound chicken cutlets
¼ teaspoon salt, divided
¼ teaspoon ground pepper, divided
½ cup slivered oil-packed sun-dried tomatoes,
plus 1 tablespoon oil from the jar |

Directions
Step 1
Sprinkle chicken with 1/8 teaspoon each salt and pepper. Heat sun-dried tomato oil in a large skillet over medium heat. Add the chicken and cook, turning once, until browned and an instant-read thermometer inserted into the thickest part registers 165°F, about 6 minutes total. Transfer to a plate.
Step 2
Add sun-dried tomatoes and shallots to the pan. Cook, stirring, for 1 minute. Increase heat to high and add wine. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Reduce heat to medium and stir in cream, any accumulated juices from the chicken and the remaining 1/8 teaspoon each salt and pepper; simmer for 2 minutes. Return the chicken to the pan and turn to coat with the sauce. Serve the chicken topped with the sauce and parsley.

If you find yourself succumbing to those typical winter blues, we propose an ideal pick-me-up: food. What better way to lift your spirits than with a comforting, home-cooked dessert? So, seize that mixer and preheat your oven, as this recipe is guaranteed to transform the winter season into your newfound favorite beginning of the year. |

The beauty of this scrumptious dessert lies in its versatility—it's a perfect year-round treat since good apples are readily available. Apples and bananas are the two fruits you can reliably enjoy throughout the year.
This cake promises a double layer of decadence: a buttery, brown sugar, and cinnamon-coated apple layer atop a second layer of a moist and flavorful buttermilk cake. What makes it even better is its simplicity—no special skills or fancy tools required, just good old-fashioned baking.
My favorite aspect, aside from its irresistible flavor, is the absence of lengthy waiting periods for the cake to cool and frost. After a brief 15-minute wait to remove it from the pan (to avoid any cracks or breaks), you can indulge in its warm goodness, paired perfectly with a scoop of rich vanilla ice cream. Pure deliciousness!
For my next attempt, I'm contemplating dicing the apples into smaller pieces and transforming them into cupcakes. If you beat me to it, I'd love to hear how it turns out.

Ingredients

3/4 cup (150g) packed light brown sugar
1/4 cup (56g) unsalted butter, melted
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp salt
2 medium golden delicious apples*, peeled, cored and sliced into 1/2-inch thick wedges
2 tsp lemon juice |

Cake
1 1/2 cups (212g) all-purpose flour (scoop and level to measure)
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup (113g) unsalted butter, at room temperature
3/4 cup (150g) granulated sugar
2 large eggs, at room temperature
1 tsp vanilla extract
2/3 cup buttermilk or milk, at room temperature |

Instructions
1. Preheat oven to 350 degrees. Spray a 9 by 9-inch square dish well with non-stick cooking spray.
2. For the topping: In a medium mixing bowl stir together brown sugar, melted butter, cinnamon nutmeg and salt. Spread evenly into greased baking dish.
3.Toss apples with lemon juice (I just do this on the cutting board I cut them on). Align apples in rows over brown sugar layer. Set aside.
4. In a medium mixing bowl whisk together flour, baking powder and salt, set aside.
5. In a mixing bowl using an electric hand mixer (or in a stand mixer fitted with a paddle attachment) cream together butter and sugar until pale and fluffy. Mix in eggs one at a time, scrape down bowl, then blend in vanilla.
6. Add 1/3 of the flour mixture to the butter sugar mixture and mix until combined. Add in 1/2 of the buttermilk and mix. Mix in another 1/3 flour mixture, then remaining 1/2 buttermilk. Finish by mixing in last 1/3 of the flour mixture. Scape down bowl and fold batter to ensure ingredients are evenly incorporated.
7. Spread batter over apple layer in baking dish. Bake in preheated oven until toothpick inserted into center comes out clean, about 35 - 45 minutes.
Let cool 15 minutes on a wire rack.
8. Run knife around edges of cake to ensure it's loosened then invert onto a platter. Cut into slices and serve warm with vanilla ice cream if desired. |
