Easy-to-Make Recipes To Try
INTRODUCING OUR NEW JUNIOR GUEST CHEF - REMY WILLOW
Master Chef Junior runner up Remy Willow Powell
Master Chef Junior runner up Remy Willow Powell, a South FL resident and soon to be published cook book author shares a couple recipes with us.

Ten year-old Remy Powell has been cooking in her grandma's kitchen since she was two.
Her passion for cuisine led her to competitive cooking and the title of Florida Future Chef Champion.

Remy was also runner-up on Gordon Ramsay's MasterChef Juinor Season 9, on Fox TV. 
Remy loves entertaining and recently began teaching kids cooking classes and catering small events.

She is looking forward to the release of her cookbook, The Big Easy Cookbook for Kids by LCIX, LLC Publisher. The book focuses on easy entertaining menus for holidays and special occasions. 
Remy's Fried Rice
Ingredients 

2 tablespoons canola oil
2 cups assorted onions, scallions and shallots
4 cloves garlic, minced
3 eggs, scrambled
4 tablespoons soy sauce
2 tablespoons sesame oil
4 tablespoons sugar
5 cups cooked brown rice
8 cups shredded Savoy cabbage
1/2 cup frozen green peas
Directions 
Heat oil in a large skillet or wok on high. Sauté the onion mixture until translucent. Add garlic and sauté for another minute or so. Be careful not to burn the garlic. Stir continuously while you sauté.
Remove the onion mixture and set aside.
Mix the soy sauce, sesame oil, and sugar together in a small bowl. Add to the pan. Add the rice and cabbage.
Stir fry until the cabbage begins to wilt and sauce mixture is fully incorporated. This only takes a few minutes. Add the green peas. Sauté for another few minutes.
Serve hot.
Makes 8 servings for normal people. 4 servings for my New Orleans family. They love this fried rice as an entire meal. 
Notes: This is a very flexible recipe. If you don’t have savoy cabbage,  use regular green cabbage. You can skip the cabbage all together if you want. You can use white rice if that’s what you have. Black rice (also called forbidden rice) works well too and is crazy good. Black fried rice doesn’t look as pretty, though. You can switch out the chicken for shrimp, diced sausage or bacon – it’s all good!
Remy's Boba Tea
Remy says "I will work for boba tea. Seriously. I can organize cabinets, babysit, cook. You name it."

Boba tea is a celebration all by itself, and a reward for when I get good grades or do something my parents are really proud of. Like write a cookbook (that’s a hint, Mom and Dad).

The best boba teas are when chewy tapioca pearls line the bottom of a tea or fruity drink. You get a big, fat straw so the boba pearls can be slurped up along with your drink . 
Ingredients
12 ounces black tea such as Lipton or your favorite flavor such as Earl Grey, brewed with two tea bags

¼ cup 5- minute tapioca pearls (Available online or at your favorite Asian market.)

Simple syrup to taste

Black teas such as Earl Grey work best for boba tea.

To Brew:
Boil water in a tea kettle. Normally you would use 8 ounces of water for one tea bag. We want stronger tea here because it will get diluted when we pour it over ice. 
Directions 
For boba, use two tea bags per 8 ounces of water. Once the water is poured over the tea bag, let it steep for 3 minutes then immediately remove the bags. Don’t oversteep or the tea will be bitter. Add simple syrup to taste and let cool.

Prepare tapioca pearls according to package directions.

Place ¼ cup tapioca pearls in a large glass or plastic cup.

Fill cup two thirds with ice. Pour tea over ice and serve with a big boba straw. 
NOTE:
1.To make simple syrup, boil one cup of sugar with one cup of water and stir until the sugar has dissolved. This only takes a few minutes. Cool and store in the refrigerator.
2. My favorite sweetener for boba tea is to make a simple syrup out of equal parts brown sugar and water. Let it simmer until it thickens a little bit. Taste the tea after you sweeten it and add more syrup if you need to.

SUMMER SALAD RECIPE:
Chef Lenore's Watermelon and Feta Salad
Ingredients

  • 3 c. seeded watermelon, cubed into one-inch pieces 
  • 1 c. feta cheese, cut into half-inch pieces
  • 1 c. red onion, thin julienne
  • 1 c. packed arugula
  • 1 c. packed butter lettuce
  • ¼ c. fresh Italian parsley leaves
  • ¼ c. fresh mint leaves
Combine the parsley, mint, butter lettuce, and arugula in a bowl and set aside.

Layer half the greens on a serving platter. Then scatter half the watermelon, onion, and feta cheese on top. Top with the greens, and tuck the remaining watermelon, feta, and red onion into the greens. Serve the Watermelon Vinaigrette on the side or drizzle lightly between the layers. 
Watermelon Vinaigrette

  • 1 cup watermelon cubes
  • 1/3 cup Manuka honey
  • 2 T. mint leaves
  • 2 T. Dijon mustard 
  • ¼ c. rice vinegar 
  • Juice of 1 lime
  • 1/3 cup extra virgin olive oil 
  • Kosher salt and black pepper to taste
Puree the watermelon in a blender. Add the honey, mint, Dijon, rice vinegar, and lime juice. Slowly add in the olive oil. Season with salt and pepper. Taste and adjust. Drizzle over the salad. Enjoy!
