As June unfolds, we’re excited to present a special Father’s Day edition of our monthly newsletter. This issue is all about celebrating the incredible dads out there—those who offer their wisdom, share their strength, and inspire us with their unconditional love.

The annual Fire on the Lake festival weekend at Camp Mack, a Guy Harvey Lodge, Marina & RV Resort is almost here. This is a sanctioned ICS Chili Cook-off Competition including a JEEP Rally with a 7 Slot Salute to the Veterans for the Most Patriotic Jeep, among other activities. Lake Kissimmee will be ablaze with competition as hot as the music. The Camp Mack Riverfront will be alive with chili tastings, live music, and specialty food and craft vendors.

Chili cooks compete in this International Chili Society (ICS) sanctioned event in either Traditional Red, Homestyle, Verde, and Veggie Categories as either an Adult or Youth Team. Teams will be judged, and the winner crowned as the 2024 Camp Mack Chili Champion.



JEEP owners and enthusiasts know adventure begins at the end of Camp Mack Road. So fuel up and venture out to Camp Mack for our Jeep Rally & Seven Slot Salute. Strut your JEEP stuff, and cheer on the chili cooks. Prizes will be awarded for the Most Patriotic Jeep and Most Patriotic Pup.
Easy-to-Make Recipes To Try
Salads make an ideal choice for summer meals as they are light and refreshing, perfect for hot weather when heavy food might feel too much. Packed with seasonal produce like crisp vegetables and sweet fruits, salads offer a nutritious way to stay hydrated and energized throughout the warmer months. Great for the weekend get-togethers!
Cowboy Caviar
Ingredients 

15 oz black beans, rinsed and drained
15 oz black eyed peas, rinsed and drained
4 Roma tomatoes seeds removed, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup sweet corn
1/2 cup red onion, diced
1 jalapeño pepper seeds removed, diced into very small pieces
1/3 cup chopped cilantro
2 avocados, pitted and diced*
2 tablespoons lime juice
Tortilla chips, for serving

Ingredients For the Dressing:
1/3 cup olive oil or avocado oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon honey
Kosher salt and black pepper, to taste
Directions 
  1. In a large bowl, combine the beans, black eyed peas, tomatoes, peppers, corn, onion, jalapeño, and cilantro. 
  2. Gently fold in the avocado and add the fresh lime juice.
  3. In a small bowl, whisk together oil, red wine vinegar, garlic, honey, salt, and pepper.
  4. Pour the dressing over cowboy caviar and stir until well combined.
  5. Serve immediately or cover and refrigerate for 30 minutes so the flavors can marinate. 
  6. Enjoy with tortilla chips!
Notes: If you are waiting longer than 30 minutes to serve, you can wait to add the avocados. Add them right before serving so they don’t turn brown.

Tahini Cabbage Steaks
Ever wonder what you can do with an entire head of cabbage? How about these delicious tahini cabbage steaks, roasted with herbs and crushed peanuts?
Ingredients
¾ cup vegetable broth
¼ cup tahini & peanut butter, mixed
4 garlic cloves, minced
1 tsp dried parsley
1 tsp paprika
½ tsp sea salt
3 tbsp nutritional yeast
3 tbsp balsamic glaze
¾ green cabbage
¼ cup crushed peanuts
¼ cup fresh parsley

Equipment
Cutting board
Sharp knife
Baking Sheet
baking parchment
Small bowl or jar
Pastry brush
Directions 
  1. Preheat the oven to 400F and line a baking sheet with parchment paper.
  2. Create the marinade by combining the broth, tahini, garlic, parsley, paprika and sea salt until a sauce is formed.
  3. Slice the cabbage into 1 inch thick “steaks”. Brush the marinade over each side. 
  4. Finish off with a balsamic glaze and sprinkle crushed peanuts over top.
  5. Bake for half an hour, until crispy. 
  6. Finish off with more nutritional yeast and fresh lemon juice as desired.
Serve your tahini cabbage steaks with a side of potatoes, rice, or salad of choice.
Depending on the size of the cabbage, you may even be able to serve your “steaks” in a burger bun with all the fixings.
 

HACKS: 
If you have a peanut allergy, you can replace crushed peanuts with a tree nut or seed. 
Instead of tahini-peanut mixture, use pure tahini paste or mix it with sun butter.
For a completely nut-free version of this recipe, use sun butter instead of peanut butter, and sprinkle with sunflower seeds, pumpkin seeds, sesame seeds, or breadcrumbs.

NOW SOMETHING SWEET:
Apple Pie Bites
Ingredients

  • 1/4 cup packed light brown sugar
  • 1 1/2 teaspoon apple pie spice*
  • 3 tablespoons unsalted butter
  • 1/3 cup chopped pecans
  • 1 small Granny Smith apple
  • 1 tube Pillsbury crescent rolls
Make Your Own Apple Pie Spice

  • 1–½ tablespoons ground cinnamon
  • 1–½ teaspoons ground nutmeg
  • 1 teaspoon allspice 
Mix them up and voila! Apple Pie Spice
Delicious served with vanilla ice cream and/or caramel syrup!
Instructions

  1. Preheat oven to 375 degrees F.  
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, combine brown sugar and apple pie spice. Set aside.
  4. Melt butter and toss apple slices in butter, set aside.
  5. Arrange crescent roll triangles on baking sheet lined with parchment paper. 
  6. Evenly distribute brown sugar mixture onto each triangle.
  7. Sprinkle each triangle with chopped pecans.
  8. Place an apple slice on the wide end of each triangle. 
  9. Wrap crescent roll dough around each apple.
  10. Brush each crescent roll with remaining butter. 
  11. Sprinkle lightly with additional apple pie spice.
  12. Bake for 10 to 12 minutes, or until golden brown. 
  13. Cool for 5 minutes before serving.
