Easy-to-Make Recipes To Try
Sausage-and-Wild Rice-Stuffed Acorn Squash
Stuffed with the season's best ingredients — sausage, cranberries, and wild rice — these sweet and succulent acorn squash become the perfect vessels for dinner. They're delicious as an all-in-one weeknight dinner on their own, or served up alongside a seasonal fall salad.

Ingredients & Instructions:

1/2 c. wild and brown rice blend

1/4 c. dried cranberries
Kosher salt and freshly ground black pepper
2 small acorn squash, halved and seeded
3 Tbsp. olive oil, divided
1 yellow onion, finely chopped
8 oz. sweet Italian sausage, casings removed
2 cloves garlic, chopped
1 tsp. fresh thyme
1/4 c. flat-leaf parsley, chopped, plus more for serving
Step 1
Place a rimmed baking sheet in oven and preheat to 425°F. Cook rice per package directions. Remove from heat and fold in cranberries. Cover and let stand 5 minutes. Season with salt and pepper.
Step 2
Meanwhile, cut a piece from the outside of each squash (this will keep them from tipping over). Rub squash with 1 tablespoon oil and season with salt and pepper. Arrange on baking sheet, hollow sides down. Roast until tender, 25 to 30 minutes.
Step 3
Heat remaining 2 tablespoons oil in a large skillet over medium heat. Add onion and season with salt and pepper. Cook, stirring occasionally, until tender, 6 to 8 minutes. Add sausage and cook, breaking into small pieces, until cooked through and beginning to brown, 6 to 7 minutes. Stir in garlic and thyme. Cook until fragrant, about 1 minute. Remove from heat and fold in parsley. Add rice and stir to combine.
Step 4
Transfer squash to platter, hollow sides up, and fill with rice mixture. Garnish with parsley.

Fig, Goat Cheese & Arugula Flatbread
In honor of the change of seasons, we bring you a FIG RECIPE by Marisa Moore!

Figs are actually NOT a fruit. They are a flower and member of the mulberry family. But they’re far too delicious to skip! Not only are figs rich in many vitamins and minerals, they are packed with fiber and antioxidants as well. One of the main health benefits that figs provide is lowering blood pressure and protecting the bone. They are packed with potassium and calcium - two necessary nutrients for longevity. Among other health benefits, figs are a natural aphrodisiac. The Ancient Greeks believed in their powers for fertility, and now modern science backs it up - they are packed with minerals, like iron, that strengthens fertility for women and men.
This beautiful and delicious fig flatbread features sweet figs, caramelized onions, creamy goat cheese and fresh arugula for a sweet and savory meal that really satisfies. It’s the perfect light meal to transition from summer to fall!
Ingredients
1 small flatbread or naan
2 tablespoons extra virgin olive oil, divided
2 ounces goat cheese, softened
¼ cup caramelized onions (make ahead)
3-5 fresh figs, sliced
2 cups arugula
1 teaspoon balsamic reduction (optional)
salt and pepper to taste
Directions For Caramelized Onions
INGREDIENTS:

2 large onions
2 tablespoon olive oil
vegetable broth, water or white wine for deglazing the pan
salt, optional
DIRECTIONS:
  1. Heat two tablespoons olive oil in a stainless steel or cast iron sauté pan over medium heat. Add the sliced raw onions. I used two large sweet onions.
  2. Stir the onions around in the pan to coat with the oil. Cook over medium heat for about 10 minutes. Revisit the onions about every 10 minutes to make sure they are not burning. Scrape up any of the little brown bits that form on the pan.
  3. Deglaze the pan with a little vegetable broth, white wine or water. Let cool and refrigerate.
PREP TIME: 5 mins
COOK TIME: 45 mins
TOTAL TIME: 50 mins
Directions For Flatbread
  1. Preheat the oven to 400F.
  2. Brush the flatbread with half the olive oil. Add dollops of the goat cheese evenly over the flatbread. Add the onions and figs.
  3. Bake 10 minutes or until the goat cheese melts a bit and the edges of the flatbread brown. During the last 2 minutes, toss the arugula with the remaining olive oil and salt and pepper to taste in a bowl until the greens are lightly dressed.
  4. Remove from the oven. Top with the dressed arugula, cracked black pepper and a drizzle of balsamic reduction.

"FALL" FOR SOMETHING SWEET:
Baked Pears with Brown Sugar and Butter
The easiest baked pears recipe that makes the most delicious pears that you can drizzle with the caramel that's made from pear juices and sugar and serve them with ice cream, yogurt or oatmeal.
Ingredients:

4 Medium or Large Pears – choose firm varieties that handle baking well, like Bosc or Anjou.
1/2 whole lemon, juice only  – freshly squeezed is best. Don’t use the bottled stuff that will have an off-taste.
1/4 cup light brown sugar  – this is what will create the caramel once joined with the pear juices and butter.

1/4 teaspoon cinnamon  (optional) this will add a fragrant fall aroma and flavor to the pears, but it will taste great without the spices as well.

1/8 teaspoon nutmeg (optional)

1/2 teaspoon vanilla extract or Vanilla paste – the paste has vanilla seeds that will add great taste and look to the caramelized pears.

2 to 4 tablespoons unsalted butter – any butter will work for this recipe. Butter will create a creamy and luscious caramel sauce for the pears.
1/8 teaspoon salt – just a tiny pinch to offset the sweetness of the pears and caramel.
Notes
Use a baking dish that is big enough to just fit the pears. If the pears are spread too far apart from each other, the juices will be evaporated quicker and there will not be enough liquid to form the caramel.

The longer the pears are baked the thicker the caramel around them will get. If you prefer a thinner caramel sauce, bake for a total of 45 minutes to 1 hour. If you prefer thicker caramel, you can bake up to 1 hour 30 minutes.
If using softer varieties of pears baking them too long will turn them mushy. To avoid this, bake only until the pears are soft. Then, remove the pears and continue cooking the caramel down until thickened.

Best Pears for Baking:
Bosc is the best variety for this baked pear recipe because it retains the shape well when subjected to heat.  They’re also wonderful for poaching like in an Amaretto Poached Pear recipe.

Anjou and Seckel are the next best choices. They bake a little softer than Bosc but still retain their shape well. You can leave the skin on when using them to help them keep their shape.
