It’s that time again, Valentine’s Day is around the corner and it is time to celebrate the people and things you love most. For many of us, it is our love of food that satisfies our hunger and puts big smiles upon our faces. This Valentine’s Day, love is in the air at Waterstone Resort & Marina, located on the Intracoastal in Boca Raton.
Whether celebrating with a significant other or girlfriends, you will enjoy a month’s worth of happenings at the four diamond boutique hotel. Every extended weekend throughout February (Thursday-Sunday), guests can enjoy a special package rate including private waterfront dining, massages, professional photography, and more. A complimentary late checkout the next day will also be included.
Additionally, on Feb. 14, it’s love at first bite with an expertly-crafted, three-course menu in the hotel’s Boca Landing restaurant. Menu highlights include Roasted Corn & Crab Bisque, Lamp Lollipop, Buffalo Mozzarella, and Lobster Risotto. This Valentine’s Day, Lionfish has the magic love potion for that special someone.
All week long, starting on Monday, Feb. 8, the Delray Beach modern coastal cuisine hotspot is brewing up Valentine’s Day-themed cocktails that bring the ‘amore’. The three aptly-named cocktails, The Love Boat, Cupid’s Envy, and Secrets In The Garden, will be available for just $15 each.
Featuring aromatic flavors like champagne strawberry, Mexican chocolate bitters and crème de violette, these cocktails are expertly-crafted by Lionfish’s team of mixologists to bring the romance.
On Feb. 14, experience love at Lionfish in Delray Beach as the modern coastal cuisine establishment celebrates its very first Valentine’s Day with something extra sweet.
The Atlantic Avenue hotspot will offer a delicious four-course tasting menu with choices meant to make you fall in love all over again.
Dish highlights include world-class favorites like Maine Lobster Bisque, Grilled Golden Tilefish, and a 5oz. Wagyu Filet drizzled with Truffle Demi Sauce.
A delicious dessert combination of buttermilk cake and strawberry milk custard will leave every guest wanting more.
Lionfish’s Valentine’s Day menu is priced at $95/person (not including beverages). A limited à la carte menu will also be offered. |

Roasted Sweet Potato Kale Salad |

Tips for making salads with kale:
Because kale is more dense and sturdy than, say, spinach leaves, you want to treat it a bit differently.
- Be sure to chop it very finely so that the bites aren’t too large.
- Add the dressing to the kale by itself first and toss it all together really well. You can even do this with your hands and “massage” the dressing in so that all of the kale is well coated.
- Let it marinate! That’s right, you’ll want to let the dressed kale sit for at least 15 minutes before adding the other toppings so that it soaks up all of the flavor. It makes all the difference.

How to make this
sweet potato kale salad:
Roast your sweet potatoes.
Drizzle the cubed sweet potato with a little olive oil and roast it up.
Make the dressing.
While the sweet potato is roasting you can whisk together all of the ingredients for the tahini dressing.
Massage the kale.
Add the dressing to your kale and toss it all together well.
Add your toppings.
Gently toss in the rest of the ingredients except the pistachios.
Spice up those pistachios.
Lastly, you’ll toast the pistachios with the maple syrup, cayenne & sea salt until fragrant, let the cool, and add them with the rest of the salad. |

Make this sweet potato kale salad ahead of time
If you’re looking to meal prep this salad or serve it at a later date, feel free to chop your kale, roast the sweet potato, mix up your dressing and even make those pistachios ahead of time! The kale, dressing and sweet potato cubes can be kept in the fridge while everything else can be kept at room temp until ready to toss together and serve.
That being said, the salad can also be tossed together ahead of time too if you prefer to do this; it’s great even a few days later! I recommend just leave out the avocado until ready to serve. |
So, you're probably familiar with the classic Italian Tiramisu. It's one of my favorite desserts. Rich and creamy, not too sweet with a boozy espresso hit and luscious mascarpone cream. How can THAT get better, right?
Well, this Raspberry Tiramisu adds another layer of spirits by spiking the creamy mascarpone, egg yolk and whipped cream blend with Chambord (a luscious French raspberry liqueur). Instead of plain cocoa powder, I shave dark chocolate (60-70%) over each of the layers and nestle fresh raspberries into the lush cream.
Think Godiva's Raspberry Cream Truffles in Tiramisu form.
I think it'd be perfect for a Valentine's Day dessert. What do you think?
