Earlier this year, just in time for SuperBowl LIV longtime LA-headquartered taco bar PinkTaco (on INSTA #pinktaco) debuted their newest location and officially brought the VIP party to Miami. The party began with an exceptional South Beach-style opening at 1200 Ocean Drive, Miami Beach, FL 33139. Celebrities were everywhere and cheered as Snoop Dog arrived, and he was, of course, greeted by a raucous Miami Beach welcome.

Seasonal & Regional Delights To Make In Your Own Kitchen
Chinook salmon (Oncorhynchus tschawytscha), also known as King salmon, is considered by many to be the best-tasting of the salmon bunch. They have a high-fat content and corresponding rich flesh that ranges from white to a deep red color.
SLOW ROASTED CITRUS SALMON
INGREDIENTS:
1 (1 1/2 pound) piece of salmon fillet
2 lemons, thinly sliced
1 blood orange, thinly sliced
1 tangerine, thinly sliced
4 sprigs thyme
1/4 cup parsley leaves, torn, plus additional for topping
1/4 cup fennel fronds
1 ½ cups olive oil
salt and pepper
INSTRUCTIONS:
Heat oven to 300°. Season salmon with salt and pepper on both sides. Place in a large baking dish with sliced lemons, oranges and herbs.

Drizzle everything with olive oil and bake until salmon is just turning opaque around the edges and is nearly cooked through, 25 to 35 minutes.

To serve, season with additional salt and pepper, fresh parsley and a squeeze of lemon juice.

Chocolate Souffle Cakes

Being the foodies that we are, we’re pretty sure that somewhere in the equation for love, chocolate must be one of the variables! So what better way to celebrate the season of love than by whipping out a freshly baked chocolate souffle cake. Usually the mere utterance of the word soufflé can make even the best of home cooks run in the other direction, but we think this recipe will help you create the decadent flavors and rich textures worth every second you feel guilty after eating it.
INGREDIENTS
  • 12 ounces bittersweet chocolate
  • 6 Eggs
  • 6 egg yolks
  • 0.75 cup Sugar
  • 0.75 cup Flour
  • 1 pinch of Salt
  • 3 teaspoons Vanilla extract
  • 1.5 cups butter
DIRECTIONS:

Bring water to a boil in the bottom of a double boiler. In the top, melt the butter and chocolate together.

While the butter and chocolate are melting, separate the 6 egg yolks. Beat the whole eggs and the yolks together with a electric mixer on medium until the mixture is thick in texture and light in color.

When the chocolate mixture is fully melted, remove from heat and mix a large dollop of the egg mixture into the chocolate until very smooth. Now fold the chocolate mixture gently into the eggs.

Next add the sugars, flour, salt and vanilla extract and continue to fold gently until thoroughly mixed.

If you want to freeze the molds (this works very well), individual silicon muffin/cupcake molds will work best. If you will cook immediately, you can also use silicon six piece muffin form (like Demarle/Flexipan). Butter each form first (optional, sprinkle each form with caster sugar), put forms on a cookie tray (trust me, this is important if you're using silicon forms) and then fill each mold about 3/4 full. If you will freeze, put immediately into the freezer. Let the cakes solidify and then transfer from the cookie tray into large air tight containers.

Bake at 350F for 8 - 11 minutes. Time will depend on how big a mold is used, if you use a really big mold it could take as long as 20 mins. You can also cook directly from frozen - this will take a little longer.

What you are looking for is a nickel to quarter-sized section with the consistency of the original batter left in the middle - this will leave the middle of the cake molten but still with enough structure so it won't collapse when removed from the mold.
If using 6 - 12 piece muffin molds: Let cool completely before taking out of the molds and place on a microwave-safe plate. heat in microwave for about 20 seconds. Transfer to serving plate.

If using individual muffin molds: Let cool briefly, invert mold onto serving plate - they should just slide out, but use a thin knife if needed.

May be served with a variety of toppings: - Sprinkle with confectioners sugar- Grand Marnier sauce - Ice cream - Whipped cream - Berries

HANKY PANKY COCKTAIL
The Hanky Panky Cocktail is a classic that dates back to at least the 1920s, so there have been some variations on it. The classic version is 1.5 ounces of gin, 1.5 ounces of sweet vermouth, and 2 dashes of Fernet Branca, a bitter, aromatic spirit, all stirred with ice in a mixing glass rather than shaken.
INGREDIENTS:
1 1/2 ounces gin
1 1/2 ounces sweet vermouth
2 dashes Fernet-Branca
INSTRUCTIONS:
Put some ice in a mixing glass and pour in all three ingredients. Stir to chill, and strain the mixture into a chilled glass. Twist an orange peel over the surface of the drink. Garnish with the orange twist.

Executive Chef Sean Thompson brings more than 17 years of hospitality experience to Chops Lobster Bar in Boca Raton, FL. Valentine Chocolates Are Sweet...

BUT NOT SO INNOCENT!

A heart-shaped box of chocolate is a sign of love, a symbol — and often tool — of romance, and an intrinsic part of Valentine's Day.

From at least the time of the Aztecs, chocolate has been seen as an aphrodisiac, but it hasn't always been connected to love's dedicated day of celebration. The roots of Valentine's Day likely originated in the pagan Roman fertility festival of Lupercalia where an exchanged of whippings not chocolates were part of a complicated fertility ritual that began with sacrificing a goat and dog.

From Europe's first contact with it, chocolate had a reputation for aphrodisiac powers and wherever chocolate went, its reputation as a sexual stimulant seemed to follow.

By the mid-19th century, St. Valentines Day had become the day in Britain (and the U.S.) on which people expressed their affection by exchanging lavish cards decorated with lace, ribbons, bow-and-arrow-wielding Cupids and of course those the lusty little chocolates.
It was in 1847, the British chocolate maker J.S. Fry & Sons produced the first modern-day bar, chocolate to eat rather than drink. The company combined cacao powder and sugar with cacao butter (the fat extracted from cacao beans) to form a moldable paste.
Tapping into the Victorian fondness for ornamentation, Richard Cadbury launched "Fancy Boxes" of chocolates in 1861. Inside, under a heavily decorated lid, assorted bonbons filled with marzipan, chocolate-flavored ganache and fruity crèmes nestled in lace doilies.

It didn't take long—1868 according to The Oxford Companion to Sugar and Sweets — for Cadbury to create a Fancy Box in the shape of a heart for the romantic holiday. Once the chocolates had been eaten, the boxes were deeply prized by sentimental Victorians, who stored love letters, lockets of hair, and other treasured mementos inside.

Even though modern science has yet to find convincing evidence of chocolate's purported libido-boosting properties, chocolate never seems to lose its allure.

Believe it or not, there was a time when wine was more widely consumed than water. During the Dark Ages, water was often unsafe to drink, so wine was drunk (pun intended) at nearly every meal as a safer alternative. Centuries later, wine is still praised for both its health benefits and the unique role it has played throughout history.
