A Personal Message From Our Chief Foodie Officer |
Dear Savor Our City Foodies,
The year 2020 has arrived and along with it some failed predictions about the futuristic and revolutionary changes we'd see in this far-off sounding year. One prediction in particular is going to be celebrated by Savor Our City all year long and we are officially inviting you to join in.
This prediction comes from just 15 years ago and it was made by futurist and computer scientist Ray Kurzweil. He wrote in his 2005 book The Singularity Is Near: When Humans Transcend Biology that by the 2020s, there will be "nanobots" capable of entering the bloodstream to "feed" cells and extract waste. As a result, they'll render the mode of food consumption as we know it obsolete. A bold prediction for just 15 years into the future, don't you think?
So here's to Ray Kurzweil's failed 2020 prediction and to LOT'S OF VERY TASTY FOOD CONSUMPTION in this new year!

Where We Have Been & What We Tasted |
Savor Our City had the opportunity to sail on Royal Caribbean’s newly refurbished Oasis of the Seas over the Christmas/Hanukkah holidays. Wow!!! What a ship! It was a 7 night Eastern Caribbean cruise sailing from Miami calling on Labadee (their private island off Haiti), San Juan and St. Thomas. There were three days at sea so it was a very leisurely itinerary which meant lots of time to just chill on deck and enjoy the plethora of amenities and activities on board. Some of my highlights: our cabin. We had a lovely balcony cabin and the room was quite spacious. “Central Park” on deck 8 was quite spectacular. We were impressed with the amount of trees and foliage found on this deck that opened up to the sky. This deck is where several of the Specialty Dining restaurants could be found as well as the top floor of the “floating” bar that traveled up and down between decks 5 and 8.
The Boardwalk was a lot of fun as well with a Carousel and game booths and a few other specialty restaurants including Johnny Rockets and a candy store. The Aqua Theater is also located on this deck at the end of the Board Walk in the back of the ship. The show they do is terrific!!! The soundtrack, amazing! It’s a free show and one of the best I have seen, on land or at sea. I would suggest making a reservation early on and sometime towards the beginning or middle of the cruise as opposed to the end as sometimes the weather sailing back into Miami may get a little rough and they might have to move some reservations around if rough weather is expected.

Red Cabbage, Onion & Walnut Tart
Do you know the feeling when you eat something so good you can’t wait to have it again? Well that was how you will feel about this red cabbage and walnut tart. Cooking with seasonal fruits and vegetables is a great way to turn your kitchen table into a bold still-life painting, where nature’s gifts colour our every day life. |
Ingredients
4 Servings
- 1 (ready-made or home-made) puff or shortcrust pastry
- 3/4 head red cabbage (shredded)
- 2 red onions (sliced)
- 1 tbsp thyme
- 2 tbsp balsamic vinegar
- Handful of walnuts
- 30 g butter (for frying)
- Salt and pepper to taste
- Crème fraîche to serve
- Handful of chopped parsley
Directions
Preheat oven 180°C/ 350 F (180 C).
In a large pan, melt the butter on a medium heat, fry the red onions for 4 minutes. Add the shredded red cabbage and continue frying for 5 more minutes, adding salt, thyme and pepper. Finish with the balsamic vinegar, reduce for 2 minutes. Set aside.
Line the tart dish with the ready rolled pastry. Add the cabbage mixture, place the walnuts all over the tart and bake in a preheated oven for 25-30 minutes, or until pastry is golden brown.
Serve warm with a spoon of crème fraîche and chopped parsley. |

The beauty of this recipe is that you can make it for four or for a crowd. If I am making this hot toddy recipe for a party, I just double or triple the recipe and whip it up in a big stockpot or dutch oven. It’ll get your house smelling amazing. |

Instructions
1. Simply place apple cider, orange slices, fresh cranberries, rosemary, and cinnamon sticks into a large pot. Bring to a boil over medium/high heat.
2. Once boiling, turn the burner down to low and let simmer for around 10 minutes.
3. While the cider is simmering, pour about 1.5 oz. of whiskey onto the bottom of each glass. This step is great for those that don’t want any alcohol at all. Then, add your favorite garnishes such as an orange slice or a piece of rosemary.
4. Pour hot apple cider mixture on top of whiskey and drink immediately. |

For Chef Robin Servidio, it was a dream come true when she purchased True Restaurant, An Authentic Maryland Bistro, back in March of 2018. Having grown up in Cape Cod, it's not surprising that her skills in the kitchen have garnered such rave reviews for this delicious Boca Raton Bistro. But what is surprising, is her background in finance. She credits her cooking skills to being an avid home cook and the wife to her husband Phil who's influence came naturally as he is part of a 100 year old history of family owned restaurants in New England. Throughout history, our relationship with food is influenced by changing practices and perspectives; from the invention of agriculture to the birth of refrigeration, customs and technological advances have affected what we eat and how we feel about our food. |
Eating black-eyed peas on New Year’s Day has been considered good luck for at least 1,500 years. According to a portion of the Talmud written around 500 A.D., it was Jewish custom at the time to eat black-eyed peas in celebration of Rosh Hashanah, the Jewish New Year (which occurs in the fall). It is possible that the tradition arrived in America with Sephardic Jews, who first arrived in Georgia in the 1730s.
According to common folklore, the tradition spread after the Civil War. During General Sherman's march, the Union Army pillaged the Confederates' food supplies but left the peas and pork, believing they were food for the animals and not for human consumption. The Southern soldiers thus felt lucky to have these supplies to get them through the cold winter. Another Southern tradition states that black-eyed peas are a symbol of emancipation for previously enslaved African-Americans, who were officially freed on New Year's Day after the Civil War.
There are a variety of explanations for the symbolism of black-eyed peas. One is that eating these simple legumes demonstrates humility and a lack of vanity. The humble nature of the black-eyed pea is echoed by the old expression, “Eat poor on New Year's, and eat fat the rest of the year.” Another explanation is that dried beans loosely resemble coins. And an additional interpretation is that because dried beans greatly expand in volume when cooked, they symbolize expanding wealth.
Clearly, a lot of people closely associate good luck with monetary gain. Since the color of U.S. currency is green, that's where the cooking greens come in.
